Carrot Pudding  (Gajar Ki Kheer)

Ingredients Of Carrot Pudding (Gajar Ki Kheer)

4 cups milk

2 tablespoons long grain rice

2 cups peeled and grated carrots (Gajar)

1/2 cup sugar

2 tablespoons slivered blanched almonds

1/2 teaspoon cardamom (Chhoti Elaichi)

1/4 cup heavy cream

1/4 cup chopped pistachios (Pista)

How To Make Carrot Pudding (Gajar Ki Kheer)-

Mix the milk and rice in a large saucepan and boil on moderate heat, stirring. Cook opened at a slow boil for 20 minutes, stirring frequently. Add the carrots (Gajar) and continue cooking opened for 15 minutes, stirring. Add the sugar and almonds and cook 10 minutes, stirring , until the mixture begins to stick to the bottom of the pan.

Now let it allow to cool to room temperature. Stir in the cardamom (Chhoti Elaichi). Add Cream. When chilled, the pudding should have a consistency slightly thinner than rice pudding. Add a little milk if it is too thick. Serve garnished with chopped pistachios (Pista).
