Aloo Began (Baigan)
Ingredients Aloo Began (Baigan)
500 Gm Potatoes (Aloo)
500 Gm Eggplant (Began ,Baigan)
2 Medium Onions, Chopped
2 Medium Tomatoes
Salt To Taste
3 Tablespoon Oil
1/2 Cup Chopped Cilantro (Hara Dhaniya)
1/4 Teaspoon Cumin Powder (Jeera)
1/4 Teaspoon Turmeric Powder (Haldi)
1/4 Teaspoon Coriander Powder (Dhaniya)
1/4 Tablespoon Ginger Paste Or Powder
1/4 Teaspoon Garlic Paste Or Powder
How To Make Aloo Began (Baigan) -
Cut eggplant (Baigan), potatoes and tomatoes in small cubes. Heat the oil in a pan. Fry onion for 1 minute. Add garlic, ginger, cumin (Jeera), turmeric and coriander; mix them for 2 minutes. Add potato and eggplant (Baigan), and cook for 12 to 15 minutes. Add tomato, and cook for 4 minutes. Sprinkle cilantro (Hara Dhaniya). Serve hot with rice, lebanese bread or naan.
